Ingredients
Scale
- 1 whole chicken (about 4–5 lbs) – Bone-in for maximum flavor
- 10 cups water – For a deep, rich broth
- 1 onion – Peeled and halved
- 3 cloves garlic – Crushed for extra aroma
- 2 carrots – Chopped
- 2 celery stalks – Chopped
- 2 bay leaves – Adds depth to the broth
- 1 teaspoon whole peppercorns – For a subtle spice
- 1 teaspoon salt – Adjust to taste
- 1 teaspoon dried thyme – Optional, for added earthiness
Instructions
- Rinse the chicken and place it in a large pot with 10 cups of water. Bring it to a boil and then reduce the heat to simmer.
- Add onion, garlic, carrots, celery, bay leaves, peppercorns, salt, and thyme. Let the broth simmer for 1 hour or until the chicken is fully cooked.
- Shred the chicken once cooled and discard the bones and skin.
- Strain the broth through a fine mesh sieve and return it to the pot.
- Bring the broth back to a simmer and adjust the seasoning to taste.
Notes
Use a whole chicken for the most flavorful broth. Skim the foam during simmering to keep the broth clear. Cook the noodles separately and add them to the soup just before serving.
