A tropical twist on the classic carrot cake, this Hawaiian Carrot Pineapple Cake combines sweet pineapple, grated carrots, and creamy frosting for a deliciously moist and flavorful dessert.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 1 cup shredded coconut (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs, oil, and vanilla extract until smooth.
  4. Add the grated carrots and drained pineapple to the wet ingredients, mixing gently.
  5. Fold in the dry ingredients, being careful not to overmix.
  6. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. While the cake is cooling, prepare the frosting by beating together the cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  9. Once the cake has cooled, spread a layer of frosting on the top of one cake, then place the second layer on top and frost the entire cake.
  10. Optional: Garnish with walnuts or shredded coconut.

Notes

For an extra tropical touch, try adding some chopped mango or raisins to the cake batter.
