Wet Ingredients:

  • 4 large eggs, separated
  • ¾ cup pumpkin puree, canned or homemade
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup whole milk, at room temperature

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt

Toppings (Optional):

  • Powdered sugar, for dusting
  • Whipped cream
  • Caramel drizzle
  • Chopped pecans or walnuts

Instructions

Step 1: Prepare the Batter

1️⃣ Preheat oven to 325°F (163°C) and grease an 8×8-inch baking dish.
2️⃣ Separate the eggs, placing yolks in one bowl and whites in another.
3️⃣ Beat the egg whites using a hand mixer until stiff peaks form. Set aside.

Step 2: Mix the Ingredients

4️⃣ In a large bowl, whisk egg yolks, sugar, and melted butter until smooth.
5️⃣ Add pumpkin puree, vanilla, cinnamon, and nutmeg—mix well.
6️⃣ Slowly whisk in flour and salt, ensuring no lumps remain.
7️⃣ Gradually add milk, stirring continuously until the batter is smooth and thin.

Step 3: Fold in Egg Whites

8️⃣ Gently fold the beaten egg whites into the batter in three parts (do not overmix).
9️⃣ The batter will be very thin—this is normal!

Step 4: Bake & Cool

🔟 Pour the batter into the prepared baking dish.
🔟 Bake for 50-55 minutes, or until the top is golden brown and the center is slightly jiggly.
🔟 Let the cake cool completely before slicing—it will set as it cools.

Step 5: Serve & Enjoy

✔ Dust with powdered sugar or top with whipped cream & caramel drizzle.
✔ Slice and serve chilled or at room temperature!

Notes

For best results, use room-temperature ingredients.
Don’t overmix egg whites! They help create the fluffy top layer.
Use canned pumpkin for consistency—if using fresh, drain excess moisture.
Cake will be soft & slightly wobbly after baking—it firms up as it cools.
