Description
Spam Kimbap is an exciting and flavorful twist on the traditional Korean dish, kimbap. This variation offers a delightful fusion of textures and flavors, from the crispy yet tender Spam to the crunch of fresh vegetables, all wrapped in a sheet of nori.
Ingredients

- 2 cups of short-grain rice (preferably sushi or kimbap rice)
- 2 tablespoons of sesame oil
- 1 tablespoon of sesame seeds
- Salt (to taste)
- 1 can of Spam (preferably the original flavor)
- 1 cucumber (julienned)
- 2–3 sheets of dried seaweed (nori)
- 2–3 eggs (scrambled)
- 1/2 cup of pickled radish (yellow kimchi-style radish, optional)
- 1/2 cup of spinach (blanched)
- 1 tablespoon of vegetable oil
- 1 bamboo sushi rolling mat (optional, but useful)
- 1 tablespoon of sesame oil for brushing
Instructions
- Rinse the rice in cold water until the water runs clear. Cook the rice according to the instructions, preferably using a rice cooker. Once cooked, let it cool slightly. Add sesame oil and sesame seeds, mixing gently. Add salt to taste. Set the rice aside to cool further.
- Open the can of Spam and slice it into thin strips. Fry the Spam strips in a non-stick skillet over medium heat for 2-3 minutes per side until golden brown. Set aside to cool.
- Slice the cucumber into thin strips, removing the seeds if you prefer. Blanch the spinach by dipping it in boiling water for 1-2 minutes. Drain, rinse under cold water, and squeeze out any excess water. Cut the spinach into shorter lengths.
- Scramble the eggs in a bowl and cook them in a skillet with a bit of oil. Cut the scrambled eggs into long strips.
- Place a sheet of seaweed on a bamboo sushi mat. Spread a thin layer of rice over the seaweed, leaving about 1 inch of space at the top edge. Arrange Spam, cucumber, spinach, scrambled eggs, and pickled radish (if using) across the center of the rice. Roll the kimbap tightly using the mat and seal the roll with a little water.
- Slice the roll into 1-inch wide pieces using a sharp knife. Brush with sesame oil for shine.
- Serve fresh, optionally with kimchi or pickled vegetables on the side.
Notes
Use freshly cooked rice for the best texture. Customize the fillings by adding other ingredients like beef or fish cakes, depending on your preferences.
